VCO is the oil extracted from coconuts without the application of heat. Virgin coconut oil is extracted from coconut milk obtained from fresh coconuts. Thereafter, using processes such as fermentation, churning, refrigeration, and the act of enzymes, the oil is separated from the water or moisture. Fats can be divided into 3 categories, depending on how long their molecule chains are. There are short, medium and long chain fatty acids. The short and medium chain fatty acids are beneficial to health.
