HOW TO MAKE HOMEMADE BANANA COCONUT CUPCAKES/COCONUT BANANA MUFFINS IN MINUTES

INGREDIENTS  

Dry ingredients

  • All purpose flour: 1/4 cup
  • Baking powder: 1/4 tsp
  • Sugar powder: 1/4 cup
  • Nisarga coconut powder: 1/4 cup
  • Almonds: 8 ( chopped)

Wet Ingredients

  • Banana : 3/4 no
  • Egg: 1/2 no
  • Vanilla Extract: 1/4 tsp
  • Salted butter : 1/4 cup
Method:
  • Sieve all purpose flour and baking powder together in a siever into a mixing bowl
  • Now add sugar powder, nisarga coconut powder, chopped almonds and combine everything together
  • In a separate mixing bowl add mashed banana properly & add whisked egg, vanilla extract & salted butter
  • Mix all the wet ingredients properly
  • Now add wet mixture to the dry mixture & fold the batter. Do not over mix the batter or else the muffins will turn hard
  • Apply butter to the muffin cups & pour the cup till 1/2 filled
  • Preheat the oven to 150 degree celsius
  • Bake for 22 minutes or till the knife inserted into the muffins comes out dry
  • Delicious banana coconut muffins are ready to be relished

  • In the recipe banana used is over ripe
