COCONUT MUFFINS

HOW TO MAKE COCONUT MUFFINS

INGREDIENTS (1 cup = 250 ml)  
  • Black raisins: 1/4 cup (seedless)
  • Golden Raisins: 1/4 cup
  • Butter : 1 tbsp
  • Ginger powder: 1/4 tsp
  • Cinnamon : A pinch (optional)
  • Brown Sugar : 1/4 cup + 1 tsp
  • Water : 1/2 cup
  • egg : 1/2 no
  • Nisarga coconut powder: 1/4 cup
  • Vanilla extract: 1/2 tsp
  • All purpose flour: 1/4 cup
  • Baking soda: 1/4 tsp
  • Salt: Pinch
Method:
  • In a thick bottom vessel on a medium flame add black raisins, Golden raisins, butter, ginger powder, cinnamon, brown sugar & water
  • Let it boil for 5 minutes on a medium flame.
  • Allow the mixture to cool into room temperature
  • Now add egg, nisarga coconut powder & vanilla extract
  • Now in a bowl mix all purpose flour & baking soda together
  • Now add this to the wet mixture
  • Mix all the ingredients lightly, till all the ingredients are combined
  • In the muffin cups, apply butter & pour the batter till the cups are 1/2 filled
  • Pre heat the oven to 180 degree celsius
  • Now place the muffin cups in the Oven
  • Bake for 15 minutes or till a fork or a tooth prick inserted into the muffins come dry
Note:
  • In the recipe brown sugar is used, but if you are using regular sugar, then 1/4 cup is enough
  • Dont let the mixture to over boil.
